Quick n’ easy Monday night dinner – Gnocchi with ham, tomato & chilli

For a super quick and very easy answer to your Monday night dinner dilemma, why not try this yummy, healthy meal the whole family will love.


Extra Virgin Olive Oil – Spray

1/2 cup chopped light ham

1 finely chopped onion

1 crushed clove of garlic

425g tin of diced tomatoes

1 teaspoon chopped chilli

freshly ground black pepper

500g fresh gnocchi

freshly grated Parmesan cheese, to garnish

freshly chopped basil, to garnish



* Spray a hot fry pan with extra virgin olive oil.  Saute the ham, onion and garlic over a medium heat until onion is tender.

* Stir in tomatoes, chilli and pepper.  Simmer for a few minutes.  Keep warm.

* Cook gnocchi as per packet instructions, approx 3 – 5 minutes in a deep pan of boiling water.  TIP – When it floats it is ready. Drain well.

* Gently toss gnocchi through hot sauce.  Garnish with Parmesan and basil if desired.

* Serve immediately.


Serves approx. 4 – Cooking time approx. 10mins.
